It isn't everyday that i get to stay at home for a full day and so i decided to do a little something out of the ordinary today instead of spending the day sleeping away. I remembered right before my 8 months break (yes, i've just got to emphasize my 8 months of holiday) that i had wanted to try cooking and baking all sorts of food and baked i did for today, i tried my hand at baking the very popular Japanese Sponge Cupcake or as many of you know as ordinary sponge cupcake.
Set off a little late today at 1pm to Bedok central to get all the ingredients needed for today's bake fest including some utensils like the egg whisk, muffin tray as well as a tiny brush for greasing the muffin tray. As expected, i spent a whopping 20bucks on all these items. Money well spent i would say as i foresee myself baking more cakes in the future. Not like i'm gonna use the trays once and leave it to collect dust. Spent one and a half hours at Bedok central walking around and debating which supermarket i should get my stuff from and i decided on NTUC. I don't have a good impression of Sheng Siong supermarket and Shop n Save didn't have what i wanted.
Home sweet home at 3pm and i immediately got down to business. Spent slightly more than an hour preparing before whisking the yellowish mixture (or should i say liquid? That's how it looked it me) into the oven. The outcome was better than expected though i knew that i wasn't able to perfect it on my first time. I had added too much butter to the mixture resulting in the cake tasting a little too buttery. And who ever saw cupcakes which sank in? Well, mine did for i did not whisk the egg whites to perfection. Seriously, whipping the egg whites for a mere 5 minutes is enough to kill me. Thank god for electric whiskers. Ha ha. Despite the too buttery feel of the cake, some parts which were cooked to perfection tasted really good and as the name suggests, really soft. Perhaps i should try my hand at the sponge cake again before i start on another recipe. I must perfect it!
I know i haven't been uploading as many photos as i have promised so it's picture time for you guys who are dying to see how my cupcakes look like as well as the long overdued Changi Airport Terminal 3 photos. Not many but do enjoy.
